this might be the easiest dessert ever! And all you need is puff pastry and some icing sugar to make the pastry.
Use your imagination for filling – I have used a simple whipped cream but lemon curd, ice cream, or pastry cream will also be delicious- and top with your choice of fruit. The baked pastry is also delicious as a biscuit to eat with coffee.
Ingredients:
375g ready rolled puff pastry (you can also make your own puff pastry)
Icing sugar to roll
Flaked almonds, optional
Sweetened whipped cream
Assorted summer fruit
Recipe:
Preheat oven to 180 degrees fan/200C and line a baking sheet with nonstick baking paper. Unroll the sheet of pastry to remove the paper and re roll it to a long cylinder. Slice 1cm slices off the roll, place the cut side of the pastry down onto a board coated generously with icing sugar, and roll out very thinly to make oval discs. Turn the dough pieces in the icing sugar to fully coat (this produces the caramelised texture). Top with flaked almonds if desired. Bake for 6-8 minutes until golden. Allow the discs to cool before filling with sweetened whipped cream (I suggest beating 150ml double cream with 1T/15g icing sugar and 1/2 teaspoon of vanilla extract) and your choice of fruit.
