Sharing some absolutely delicious Portuguese custard tarts that I baked over the weekend. Homemade puff pastry is filled with a lemon and cinnamon flavoured custard, pressed into specially shaped tins, and baked in a hot oven.

A bit of seasonal baking today using some of the Seville Orange marmalade I made a few weeks ago. Why not try this delicious orange polenta cake recipe with a crunchy topping at home.
Three generations came together to bake and celebrate over the weekend. On the baking menu was a giant sausage roll with homemade spicy ketchup and vanilla madeleines with a citrus glaze.
Victoria Sponge with homemade raspberry jam and vanilla buttercream brightens up this week. A top tip to make your baked treats last longer and enhance the flavour is to brush them with a vanilla syrup when they first come out of the oven.

A bit of Scandinavian baking was the perfect project for a snowy day. The saffron buns are made with a yeasted, laminated dough which was a lot of fun to make and well worth the effort! A delicious treat after a snowy walk.
